Los carbohidratos que contienen son, en la mayor\u00eda de casos, complejos y esto favorece los niveles constantes de glucosa en nuestro organismo. La fibra que contienen tambi\u00e9n favorece esta lenta absorci\u00f3n de los hidratos y, adem\u00e1s, es beneficiosa para el control de los niveles de colesterol y la regulaci\u00f3n del tr\u00e1nsito intestinal. Los garbanzos tambi\u00e9n son importantes como fuente de prote\u00edna de origen vegetal, pero deben combinarse con cereales para obtener prote\u00ednas de alta calidad. Adem\u00e1s, la fibra ayuda a regular el tr\u00e1nsito intestinal, favorece el crecimiento de la flora intestinal beneficiosa para el organismo y contribuye a la sensaci\u00f3n de saciedad, razones por las cuales son una opci\u00f3n muy saludable e indicadas en las dietas de control de peso. Los frijoles no contienen l\u00edpidos, son ricos en vitaminas del grupo B y los minerales destacan por su contenido en potasio, hierro y magnesio.
